Salmon with strawberry and basil salsa recipe

Quick and easy hearty and healthy salmon dish.
Ingredients:
  • 30.00 ml pistachio dukkah (optional)
  • 4 Skin-On Salmon Portions
  • 45.50 gm olive oil
  • 120g strawberries, finely chopped
  • 1/2 red onion, finely chopped
  • 4 radishes, finely chopped
  • 40.00 ml finely shredded basil
  • 20.00 ml red wine vinegar
  • 120g pkt Baby Rocket
  • 1 fennel, trimmed, finely shaved
  • 1 Lebanese cucumber, thinly sliced diagonally
  • 21.00 gm lemon juice
Instructions:
  • Sprinkle dukkah onto a small plate and place 1 piece of salmon on it, skin-side up. Gently press to coat the salmon in dukkah. Transfer to a clean work surface and repeat with the rest of the salmon.
  • In a medium frying pan over medium-high heat, heat 2 tsp of oil. Sear the salmon, skin-side down, for 3 mins until crispy. Flip the salmon and reduce heat to medium. Cook for 1½-2 mins for medium doneness or until cooked to your preference. Place on a clean plate and loosely cover with foil. Let it rest for 5 mins before serving.
  • In a bowl, mix together the strawberries, onions, radishes, basil, vinegar, and 1 tablespoon of the remaining oil. Season to taste.
  • In a large bowl, mix together the rocket, fennel, and cucumber. Drizzle with lemon juice and remaining oil, then toss everything together until well combined.
  • Portion out the rocket mixture and salmon onto individual plates. Drizzle over the strawberry mixture before serving.
