Whip up a delicious salmon with lemon cream sauce in just 20 minutes!
Ingredients:
  • 3 Tbsp lemon juice
  • 1/4 cup chicken broth, fish stock, clam juice, white wine, or water
  • 2/3 cup heavy cream
  • 1 tablespoon extra virgin olive oil
  • Salt
  • Freshly ground black pepper
  • 1 1/2 pounds salmon fillets
  • Parsley for garnish
Instructions:
  • Prepare the sauce by combining lemon juice, broth, and cream in a small pot. Bring to a simmer, then cover and gently simmer for 10 minutes. Season with salt and pepper, then uncover and briefly increase heat to high to thicken the sauce.
  • Prepare the salmon by checking for any stray scales (if skin-on) and removing pin bones using needle nose pliers while the sauce is cooking.
  • Prepare the salmon fillets: Heat oil in a large sauté pan until hot. Place the fillets in the pan, lower the heat to medium, and cook for 3 to 5 minutes until golden brown. Flip the fillets and cook for an additional 1 to 5 minutes according to your preferred doneness. For medium-rare, cook the second side of a 1-inch fillet for about 3 minutes.
  • Drizzle lemon cream sauce over the salmon fillets on plates, garnish with chopped parsley, and serve. For crispy skin, serve skin-side up; otherwise, serve skin-side down.
