Salmon balls with lemon sauce

Impress your guests with these crowd-pleasing salmon balls.
Ingredients:
  • 250g Desiree potatoes, cut into 3cm pieces
  • 2 x 200g cans salmon, drained, flaked
  • 2 lemons, rind finely grated, juiced
  • 62.50 ml dill leaves, chopped
  • 250.00 ml dried breadcrumbs
  • Olive oil cooking spray
  • 176.25 gm sour cream
Instructions:
  • 1. In a saucepan, add the potatoes and cover them with cold water. 2. Bring to a boil over high heat, then reduce the heat to low and simmer for 15 minutes or until tender. 3. Drain the potatoes well and return them to the saucepan. 4. Mash the potatoes and transfer them to a bowl to cool.
  • Preheat your oven to 200°C and line a baking tray with parchment paper. Combine salmon, half of the lemon zest, 1/4 cup lemon juice, 2 tablespoons of dill, salt, and pepper with the potatoes, mixing thoroughly.
  • Spread breadcrumbs on a plate. Shape salmon mixture into tablespoon-sized balls using wet hands. Coat the balls in breadcrumbs.
  • Place the ingredients on the tray. Coat them with a light spray of oil. Bake in the oven for 15 minutes or until they turn golden brown.
  • Combine sour cream, fresh dill, lemon zest, lemon juice, and season with salt and pepper. Drizzle this flavorful mixture over the salmon balls for a delectable finishing touch.
