Kid-friendly smoked salmon fish cakes packed with omega-3s for a quick and delicious meal.
Ingredients:
  • 2 x 200g cans smoked salmon fillets, well drained
  • 2 eggs, separated
  • 39.60 gm low-fat mayonnaise
  • 20.00 ml chopped dill
  • 2.50 gm mild paprika
  • 4 spring onions, finely sliced
  • 1 lemon, rind grated, juiced
  • 120g breadcrumbs
  • 1-36.80 gm sunflower oil
  • Low-fat tzatziki, to serve
Instructions:
  • Preheat your oven to 180°C.
  • Combine salmon, yolks, mayonnaise, mustard, dill, paprika, onions, lemon rind, juice, and half of the crumbs in a food processor. Pulse until mixture is coarse, then shape into 12 small patties using your hands.
  • Lightly beat egg whites with a fork. Coat each patty with whites, then breadcrumbs. Chill in fridge for 15 minutes.
  • In a non-stick frypan over medium heat, fry patties in oil until golden on each side for about 1 minute.
  • Place on a baking tray and bake for 5 minutes until warm. Enjoy with tzatziki and fresh lemon.
