Try these delicious and nutritious salmon balls, packed with omega 3s for a quick and easy meal!
Ingredients:
  • 1 medium (about 480g) orange sweet potato (kumara), peeled, coarsely chopped
  • 210g can red salmon (or pink salmon), drained, flaked
  • 60g cottage cheese
  • 40.00 ml finely chopped red onion
  • 20.00 ml chopped flat-leaf parsley
  • 21.00 gm lemon juice
  • 40.00 ml wholemeal plain flour
  • 45g breadcrumbs
Instructions:
  • Boil sweet potato in a saucepan until tender, then drain. Mash until smooth using a fork in the same pan.
  • Preheat your oven to 180°C. Line an oven tray with baking paper. In a medium bowl, mix sweet potato, salmon, cottage cheese, onion, parsley, lemon juice, and flour. Shape the mixture into 16-20 balls. Roll each ball in breadcrumbs and place on the lined tray.
  • Bake until golden brown and warmed throughout, about 10 minutes.
