Gather loved ones and enjoy a delectable Strawberry Pistachio Tart together.
Ingredients:
  • 70g pistachio
  • 60g almond meal
  • 110g caster sugar
  • 1 Free Range Egg
  • 2.00 Free Range Egg yolk
  • 35g plain flour
  • 350g fresh strawberries, washed, thinly sliced
  • 250g mascarpone
  • 12.00 gm icing sugar
  • 2.50 gm Brand Ground Cinnamon
  • Small mint leaves, to serve
  • 225g plain flour
  • 55g icing sugar
  • 125g butter, chilled, chopped
Instructions:
  • In a food processor, blend the flour, icing sugar, and butter until the mixture looks like fine breadcrumbs. Add the egg yolk and 2 teaspoons of chilled water, and process until the dough just forms. Transfer the dough onto a floured surface, shape it into a disc, cover it, and refrigerate for 30 minutes to chill.
  • Preheat your oven to 200 degrees Celsius.
  • Flatten dough into a 3mm-thick disc on a lightly floured surface. Use it to line the base and sides of a 22cm-round fluted tart pan with a removable base. Trim any excess dough. Chill in the fridge for 15 minutes.
  • Place baking paper in the pastry shell and fill it with pastry weights. Bake for 10 minutes, then remove the paper and weights and bake for an additional 10 minutes until lightly golden. Decrease oven temperature to 180C.
  • While you wait, finely grind the pistachios, then add the almond meal and continue processing until well combined.
  • Prepare a velvety mixture by beating the butter and sugar with an electric mixer until light and creamy. Introduce the egg and egg yolk, mix well. Gently fold in the pistachio mixture and flour until fully combined. Evenly spread the filling over the pastry case and bake for 30 minutes until the filling is firm. Let it cool completely before enjoying.
  • Gently warm the jam in a saucepan until melted. Strain it through a fine sieve to remove seeds. Brush half of the jam over the filling, then place the strawberries on top. Lightly brush the strawberries with the rest of the jam.
  • Mix together mascarpone, icing sugar, and cinnamon in a bowl. Place the strawberry tart on a serving plate, add mint leaves, and serve with the cinnamon mascarpone.
