Irresistible buttery melting moments, perfect for any occasion!
Ingredients:
  • 250g butter, softened
  • 99.00 gm pure icing sugar, sifted
  • 4.40 gm vanilla extract
  • 500.00 ml plain flour
  • 42.90 gm custard powder
  • 60g butter, softened
  • 150.00 gm pure icing sugar, sifted
  • 20.00 ml finely grated lemon rind
Instructions:
  • 1. Preheat your oven to 160°C/140°C fan-forced and line 2 baking trays with baking paper. 2. With an electric mixer, whip together the butter, sugar, and vanilla until light and fluffy. 3. Sprinkle the sifted flour and custard powder over the butter mixture and mix with a wooden spoon until a soft dough comes together.
  • Roll level tablespoons of dough into 32 balls and place on prepared trays, ensuring space for spreading. Gently flatten each biscuit to 1cm thickness using a fork dipped in flour. Bake for 15 to 20 minutes until light golden. Allow to cool on the tray for 10 minutes before transferring to a wire rack to cool completely.
  • In a bowl, combine butter, sugar, and lemon rind. Use an electric mixer to beat until light and creamy.
  • Take 1 biscuit and generously spread 2 teaspoons of filling on one side. Top it with another biscuit to create a delicious sandwich. Repeat this process with the remaining biscuits and filling.
