Giant lemon melting moment recipe

Oversized lemon melting moments with rich buttercream filling, made effortlessly with only 6 ingredients.
Ingredients:
  • 250g butter, chopped, at room temperature
  • 60g (1/3 cup) icing sugar mixture, plus extra, to dust
  • 4.40 gm vanilla extract
  • 225g (1 1/2 cups) plain flour
  • 70g (1/2 cup) custard powder
  • 125g butter, chopped, at room temperature
  • 210g (1 1/3 cups) icing sugar mixture
  • 1 tsp finely grated lemon rind
Instructions:
  • Preheat oven to 150°C (130°C fan-forced).
  • Using electric beaters, whip the butter and icing sugar until light and creamy. Incorporate the vanilla. Sift in the flour and custard powder, then gently mix with a flat-bladed knife until just combined. Bring the dough together with your hands and split it into two equal parts.
  • - Take a portion of the dough and place it on a sheet of baking paper. - Gently press or roll out the dough to form a 16cm round shape. - If the dough is too soft, you can chill it to make it easier to handle. - Transfer the round dough onto a large baking tray. - Repeat the process with the remaining dough to make the top biscuit round. - Use the side of a wooden spoon handle to create indents on the top round.
  • Bake for 40 minutes or until lightly golden. Allow to cool on the tray for 10 minutes before transferring to a wire rack, sliding off the paper, to cool completely.
  • Using electric beaters, whip together the butter and icing sugar until light and fluffy. Mix in the lemon rind.
  • Place the indented biscuit on a serving plate, top it with the buttercream filling, then add the other biscuit on top and lightly dust with icing sugar before cutting into wedges to serve.
