Elevate your classic rösti by incorporating extra veggies for added nutrients and visual appeal. Use it as a versatile base for various toppings like poached eggs and spinach or get creative with toppings like halloumi, grilled mushrooms, or roasted cherry tomatoes. The possibilities are endless!
Ingredients:
  • 3 large carrots
  • 600 g potatoes
  • ½ teaspoon Dijon mustard
  • 100 g frozen peas
  • 100 g baby spinach
  • 50 g feta cheese
Instructions:
  • Preheat the oven to 180°C/350°F/gas 4. Peel and grate the potatoes and carrots. Season with sea salt, let sit for 5 minutes. Mix mustard, lemon juice, olive oil, salt, and pepper in a bowl. Drizzle olive oil in another bowl, add pepper, then squeeze excess liquid from the vegetables and mix with oil. Spread on a baking tray and bake for 35 minutes. Blanch peas for a minute, then mix with dressing and spinach. Poach eggs and serve on top of the rösti. Toss salad with feta and serve. Enjoy family-style at the table.
