Delicate and irresistible, melting moments are the perfect bite-sized treat.
Ingredients:
  • 125g Unsalted Butter, softened
  • 115g plain flour
  • 45g icing
  • 50g custard powder
  • 60g butter, softened, extra
  • 110g icing sugar mixture
  • 2 tsp finely grated lemon rind
Instructions:
  • Preheat your oven to 160°C and line 2 oven trays with baking paper. Using an electric mixer, whip the butter until it's pale and creamy. Then, mix in the flour, icing sugar, and custard powder using a wooden spoon until well combined.
  • Roll teaspoon-sized portions of the dough into balls using your hands. Arrange the balls 3cm apart on lined trays. Gently flatten the balls with an icing sugar-dusted fork. Bake in a preheated oven for 15 minutes, swapping trays halfway through, until cooked. Let them cool for 30 minutes before serving.
  • With an electric mixer, whip together the additional butter and icing sugar until fluffy. Stir in the lemon rind and juice until well incorporated. Spread the butter mixture on one side of half the biscuits and assemble sandwiches with the remaining biscuits.
