Enhance biscuit recipe with Baileys liqueur for an unforgettable boozy twist.
Ingredients:
  • 250g butter, chopped, at room temperature
  • 80g (1/2 cup) icing sugar mixture, sifted, plus extra, to dust
  • 4.00 tsp Irish Cream Liqueur
  • 225g (1 1/2 cups) plain flour
  • 70g (1/2 cup) cornflour
  • 80g butter, chopped, at room temperature
  • 120g (2/3 cup) icing sugar mixture, sifted
Instructions:
  • Preheat your oven to 180°C/160°C fan forced and line 2 baking trays with baking paper.
  • In a large bowl, whip the butter, sugar, and Baileys with electric beaters until light and creamy. Gently fold in the mixture of flour and cornflour.
  • With floured hands, shape 2 teaspoonfuls of the mixture into balls and place them on the trays. Keep the balls 3cm apart. Flatten the cookies slightly using a fork dipped in flour to create a decorative pattern.
  • Bake in the oven for 14-16 minutes until the biscuits turn a pale golden color. Allow to cool for 5 minutes before transferring to a wire rack to cool completely.
  • In a large bowl, use electric beaters to whip together butter, sugar, and Baileys until pale and creamy to make the buttercream.
  • Pipe the buttercream onto the flat side of half the biscuits using a 2cm star-shaped nozzle. Sandwich with the remaining biscuits and dust with extra icing sugar before serving.
