Baileys molten lava cake with Baileys ice cream recipe

Decadent chocolate molten fondant with Baileys ice cream for a luxurious winter treat.
Ingredients:
  • 150g dark chocolate, chopped
  • 100g (1/2 cup, firmly packed) brown sugar
  • 40.00 ml Irish Cream liqueur, plus extra, to serve
  • 10.00 gm cocoa powder, plus extra, to dust
  • Dark and white chocolate curls, to serve (see note)
  • 250g vanilla ice-cream, softened slightly
  • 40.00 ml Irish Cream liqueur
Instructions:
  • Combine the ice-cream and Baileys in a bowl, stirring until well mixed. Transfer the mixture into a container, cover, and freeze for 30 minutes until solid.
  • Preheat the oven to 200C/180C fan forced, then grease four 2⁄3 cup (160ml) metal dariole moulds or ramekins and place them on a baking tray. In a heatproof bowl, combine chocolate, butter, sugar, and Baileys. Place the bowl over a saucepan of simmering water, making sure it doesn't touch the water. Stir the mixture for 5 minutes until melted and smooth. Remove from heat and allow to cool slightly.
  • Combine egg yolks and whole egg in a small jug and whisk together. Gradually mix the eggs into the chocolate mixture until it becomes thick and glossy. Sift cocoa powder and flour together over the chocolate mixture, then gently fold to combine. Pour the mixture evenly into prepared moulds and chill in the fridge for 15 minutes, or until cold.
  • Bake the fondants until firm on top, approximately 16 minutes. Let them rest for 5 minutes. Gently loosen the edges with a small sharp knife, then invert onto plates. Sprinkle with extra cocoa, and enjoy with Baileys ice cream, chocolate curls, and a drizzle of extra Baileys.
