Microwave mug cakes: quick, creamy delights in minutes.
Ingredients:
  • 30g butter
  • 1 egg
  • 53.75 gm caster sugar
  • 1 tsp vanilla bean paste
  • 62.50 ml Red Velvet Cupcake Irish cream liqueur
  • 75.00 gm self-raising flour
  • Strawberry ice-cream, to serve
  • 60ml cupcake
Instructions:
  • Simply coat two 1 1/2-cup-capacity microwave-safe mugs with a light layer of grease.
  • Melt butter in a small microwave-safe bowl on HIGH (100%) for about 10 seconds.
  • In a bowl, whisk together the egg, sugar, vanilla, and Baileys until combined. Gradually add flour, whisking until smooth. Mix in the butter until fully incorporated. Divide the batter evenly among the prepared mugs. Microwave on HIGH for 1 minute 20 seconds, or until puffed and just firm to the touch.
  • Add a scoop of ice cream on top of each cake and generously drizzle with extra Baileys. Serve immediately for a decadent treat.
