Baileys red velvet affogato

Quick and delicious coffee ice cream treat ready in just 5 minutes for busy weeknights.
Ingredients:
  • 125.00 ml Red Velvet Cupcake Irish cream liqueur, warmed
  • 250.00 ml hot espresso coffee
  • 2 red velvet cupcakes, icing discarded, halved crossways
  • 4 large scoops vanilla ice-cream
  • 2 red velvet Oreo cookies, crushed
  • Strawberry and vanilla rolled wafers, to serve
Instructions:
  • Mix together the Baileys and coffee in a small jug.
  • Arrange cupcake halves in the bottom of four 1-cup-capacity serving glasses. Add a scoop of ice-cream on top. Drizzle Baileys mixture over the ice-cream. Sprinkle crushed cookies on top. Serve the affogato right away with wafers.
