Indulgent chocolate pudding with Baileys Irish cream sauce. Enjoy!
Ingredients:
  • 125ml (1/2 cup) milk
  • 40g butter, chopped
  • 60g milk chocolate, chopped
  • 4.40 gm vanilla essence
  • 150g (1 cup) self-raising flour
  • 155g (3/4 cup, firmly packed) brown sugar
  • 1 egg, lightly whisked
  • 125ml (1/2 cup) Irish Cream liqueur, plus extra, to drizzle
  • 10.00 gm cocoa powder
  • 250ml (1 cup) boiling water
  • Whipped cream or ice-cream, to serve
Instructions:
  • - Preheat the oven to 180C/160C fan forced. - Grease an 8-cup baking dish. - In a small saucepan, combine milk, butter, and chocolate. - Heat on low until chocolate and butter are melted. - Remove from heat and whisk until smooth. - Transfer the mixture to a bowl or jug and let it cool slightly. - Stir in the vanilla.
  • Sift the flour and 55g (1/4 cup) sugar into a bowl, create a well in the center, and add the egg and milk mixture. Gently fold with a large metal spoon until fully combined, then transfer to the prepared dish.
  • In a jug, mix Baileys, cocoa, and the remaining 100g (1/2 cup) sugar. Pour in the boiling water and stir with a fork until the sugar dissolves. Slowly pour the mixture over the pudding using the back of a large spoon. Bake on a tray for 30-35 minutes until the pudding is firm and the sauce bubbles. Let it cool for 5 minutes before serving.
  • Top it off with a dollop of cream or a scoop of ice-cream and a generous drizzle of additional Baileys.
