Delicious mixed berry melting moments, ideal for morning or afternoon tea!
Ingredients:
  • 125g butter, softened
  • 110g plain flour
  • 40g icing sugar mixture
  • 35g cornflour
  • 10.00 gm custard powder
  • 1 tsp finely grated lemon rind
  • 62.50 ml frozen mixed berries
  • 60g butter, softened
  • 110g icing sugar mixture
  • 5.30 gm lemon juice
  • 1/2 tsp finely grated lemon rind
Instructions:
  • Preheat your oven to 160°C and line 2 baking trays with parchment paper. In a bowl, use an electric mixer to beat the butter until very pale. Add the flour, icing sugar, cornflour, custard powder, and lemon rind, and stir until just combined.
  • Shape teaspoons of mixture into balls and place evenly on lined trays, leaving 3cm of space between each one. Use a fork dusted lightly with cornflour to gently flatten each ball. Bake for 10 minutes or until golden brown, rotating the trays halfway through baking. Allow to cool completely on the trays before enjoying.
  • Cook mixed berries in a small saucepan over low heat for 4 minutes until softened and slightly thickened. Strain through a fine sieve into a bowl, discarding solids. Allow to cool completely.
  • In a medium bowl, cream the butter with an electric mixer until pale. Mix in the icing sugar until well combined. Incorporate the berry puree, lemon juice, and lemon rind until fully blended.
  • Spread the luscious mixed berry filling on half of the biscuits, then create satisfying sandwich pairs with the remaining biscuits.
