Indulge in delectable melting moments topped with smooth raspberry puree for a quick and delightful sweet treat!
Ingredients:
  • 125g butter, softened
  • 110g plain flour
  • 40g icing sugar mixture
  • 20.00 gm cornflour
  • 20.00 gm custard powder
  • 1 tsp finely grated lemon rind
  • 62.50 ml frozen raspberries
  • 60g butter, softened, extra
  • 110g icing sugar mixture
  • 1/2 tsp finely grated lemon rind, extra
  • 52.80 gm raspberry jam
Instructions:
  • Preheat your oven to 160C and line a baking tray with parchment paper. In a medium bowl, use an electric mixer to beat butter until very pale. Add flour, icing sugar, cornflour, custard powder, and lemon rind, and stir until just combined.
  • Form 2 teaspoonfuls of mixture into balls and arrange them on the prepared tray, leaving 3cm of space between each. Flatten each ball gently using a fork dusted lightly with cornflour. Bake for 10 mins until they are lightly golden and cooked through. Let them cool on the tray for 30 mins.
  • In a small saucepan, gently heat the raspberries until they break down, about 2 minutes. Strain the mixture through a fine sieve into a bowl.
  • In a medium bowl, use an electric mixer to whip the extra butter until very pale. Slowly incorporate the icing sugar, beating thoroughly after each addition. Mix in the raspberry puree and extra lemon rind until fully combined.
  • Spread icing over half of the biscuits and jam over the rest. Make sandwiches with the biscuits.
