Gift these delectable melting moments in beautiful packaging to your loved ones.
Ingredients:
  • 250g butter, softened
  • 49.50 gm icing sugar mixture
  • 110.55 gm golden syrup
  • 1 3⁄3250.00 ml plain flour
  • 1⁄130.00 gm cornflour
  • 100g butter, softened
  • 112.50 gm icing sugar mixture
  • 20.00 ml dark rum (see note)
  • 1 tsp finely grated orange rind
  • Gel food colouring (red and green)
Instructions:
  • Preheat your oven to 160C/140C fan-forced and decorate 2 large baking trays with baking paper.
  • With an electric mixer, whip together butter, icing sugar, and syrup until creamy. Sift flour over the mixture and stir until well combined.
  • Transfer the dough into a piping bag equipped with a 2cm star-shaped nozzle for a professional touch.
  • Pipe the dough into 6cm-diameter circles, spacing them 5cm apart on prepared trays. Bake for 15 to 17 minutes, or until golden. Then, transfer to a wire rack lined with baking paper to cool.
  • To create Rum Buttercream, start by creaming fluffy butter with an electric mixer. Slowly incorporate icing sugar until light and fluffy. Mix in rum and orange rind until combined. Separate the mixture into 3 bowls and color one red, one green, and leave one plain.
  • Lay half of the biscuits flat-side up and generously spread icing on each one. Top with the remaining biscuits to create delightful sandwiches. Serve as desired (refer to note).
