Golden syrup and pecan self-saucing pudding

Decadent winter dessert with a nutty crunch from pecans.
Ingredients:
  • 187.50 gm self-raising flour
  • 59.40 gm firmly-packed brown sugar
  • 1 egg
  • 80g butter, melted, cooled
  • 53.60 gm golden syrup
  • 165.00 ml pecan nuts, finely chopped
  • thickened cream, to serve
  • 90.00 gm firmly-packed brown sugar
  • 7.50 gm cornflour
  • 83.75 gm golden syrup
  • 312.50 gm boiling water
Instructions:
  • Preheat your oven to 180°C. Grease a 5-cup, 6cm-deep, 20cm round ovenproof dish and place it on a baking tray lined with baking paper.
  • Sift flour into a large bowl, then stir in sugar. In a separate jug, whisk together milk, egg, butter, and golden syrup. Pour this mixture into the flour, add pecans, and gently stir until combined. Spoon the batter into the prepared dish and smooth the surface.
  • Prepare the sauce by mixing sugar and cornflour in a bowl. Sprinkle the mixture over the pudding. In a heatproof jug, blend syrup and boiling water together. Pour slowly over the back of a large metal spoon onto the pudding. (Refer to notes if needed).
  • Bake for 50-55 minutes until a inserted skewer comes out clean in the center. Serve hot with cream.
