Passionfruit pulp, icing sugar, flour, custard powder combine for irresistible melts.
Ingredients:
  • 250g butter, chopped
  • 150.00 gm pure icing sugar
  • 375.00 ml plain flour
  • 65.00 gm custard powder
  • 60g butter
  • 20.00 ml passionfruit pulp
Instructions:
  • Preheat the oven to 160C or 140C fan-forced. Line 2 baking trays with non-stick baking paper. Use electric beaters to cream the butter until soft, then mix in the icing sugar until well combined.
  • Gently combine flour and custard powder with a butter knife until a dough ball forms (avoid overmixing to keep the biscuits tender). Roll teaspoon-sized portions into balls, place on trays, and flatten with a fork in a crisscross pattern.
  • Bake for 15 minutes until the bottom is lightly browned, then cool completely on wire racks.
  • Prepare the filling by using electric beaters to mix butter, icing sugar, and passionfruit pulp until smooth. Spread the filling on one biscuit and top it with another to create a sandwich. Repeat this process to make approximately 30 filled biscuits.
