Sticky miso ginger chicken wings

Elevate chicken wings with a sweet and spicy ginger marmalade marinade.
Ingredients:
  • 1kg chicken wings
  • 24.00 gm red or white miso paste
  • 52.80 gm ginger marmalade
  • 42.00 gm soy sauce
  • 2 tsp sesame oil
  • 200g (1 cup) jasmine rice
  • 20g (1/4 cup) desiccated coconut, toasted
  • 2 green shallots, thinly sliced
  • Toasted sesame seeds, to serve (optional)
  • Steamed asian greens, to serve
Instructions:
  • 1. Preheat your oven to 210C (190C fan forced) and line a large baking tray with parchment paper. 2. In a large bowl, place the chicken. 3. In a small bowl, combine miso, garlic, marmalade, soy sauce, and sesame oil. Stir well. 4. Pour the mixture over the chicken and toss until coated. 5. Place the coated chicken on the prepared baking tray. 6. Bake for 35-40 minutes, turning halfway through, until the chicken is golden and sticky.
  • Cook the rice as per the instructions on the packet until tender. Mix in the coconut and shallot.
  • Plate the rice mixture and chicken wings individually. If desired, top with sesame seeds for added flavor. Accompany the dish with steamed greens.
