Sticky sesame prawns

Exciting blend of miso, ginger, sesame, and chili elevate succulent prawns into an irresistible Asian delight.
Ingredients:
  • 2 carrots
  • ½ a cucumber
  • 100 g snow peas
  • 200 g tenderstem broccoli
  • 300 g fine rice noodles
  • 3 limes
  • 2 tablespoons sesame seeds
  • vegetable oil
  • 16 large raw shell-on green banana king prawns, from sustainable sources
  • 2 spring onions
  • 1 fresh red chilli
  • 1 bunch of fresh coriander
  • 5cm piece of ginger
  • 3 cloves of garlic
  • 2 tablespoons hot chilli sauce
  • 200 ml fresh cloudy apple juice
  • 2 tablespoons runny honey
  • 1 tablespoon sweet miso
Instructions:
  • 1. To make the sauce, grate the ginger and garlic into a pan, then add sliced spring onions, chili sauce, apple juice, honey, and miso. Bring to a boil over medium heat, then simmer until syrupy. 2. Prepare the vegetables by matchsticking the carrots and cucumber, slicing the snow peas, and halving the broccoli. Cook rice noodles with broccoli. 3. Toss cooked noodles with 3 tablespoons of sauce and lime juice. Toast sesame seeds until golden. 4. Stir-fry prawns in oil until pink, then add remaining sauce and cook until sticky and caramelized. 5. Serve prawns over noodle salad, topped with sliced spring onions, chili, coriander, and lime wedges. Enjoy!
