Indulge in a cool, homemade ginger beer to beat the summer heat.
Ingredients:
  • 440g caster sugar
  • 300g fresh ginger, peeled, thinly sliced
  • 250ml lemon juice
  • 1L soda water
  • Ice cubes, to serve
Instructions:
  • In a saucepan over gentle heat, blend sugar, ginger, and 4 cups (1 litre) of water, stirring until sugar dissolves. Let it gently simmer for 20 minutes. Strain the mixture, leaving behind the ginger, and let it cool.
  • After adding the lemon juice, transfer the mixture to a jug. Right before serving, mix in the soda water and ice.
