Ingredients:
  • 215g packet dried pears
  • 375ml ginger beer
  • 53.75 gm caster sugar
  • 1 cinnamon stick
  • 4 slices thick fruit bread, toasted
  • 125.00 ml low-fat Greek-style yoghurt
Instructions:
  • Place the pears in a heatproof bowl and pour boiling water over them. Allow them to stand for 15 minutes or until they have softend.
  • In a saucepan, mix ginger beer, caster sugar, and cinnamon over medium heat until sugar dissolves, stirring for 3 minutes. Reduce heat to low, simmer uncovered for 5 minutes. Add pears and simmer uncovered for 15-20 minutes until pears are soft and syrup thickens. Cool for 30 minutes, then discard cinnamon before serving.
  • In each serving bowl, layer 1 piece of toast, 2 to 3 pears, and a drizzle of syrup. Finish with a dollop of yogurt on top. Serve.
