Ginger and Wine Poached Pears with Pumpkin Whipped Cream

Elegant autumn dessert with pears and pumpkins in individual portions.
Ingredients:
  • 2 cups water
  • 2 cups dry white wine
  • 1 1/4 cups granulated sugar
  • 1/2 lemon
  • 2 slices fresh gingerroot
  • 4 Bosc pears, peeled, cut in half and cored
  • 1 cup whipping cream
  • 1/4 cup powdered sugar
  • 1 cup canned pumpkin (not pumpkin pie mix)
  • 1/4 cup crushed gingersnap cookies
Instructions:
  • In a large saucepan, warm water, wine, and sugar until the sugar dissolves. Add lemon, ginger, and pears. Simmer for 15-25 minutes until pears are tender. Remove from heat, cover, and allow to cool. Remove pears from liquid and discard the liquid.
  • In a medium bowl, whip together heavy cream, powdered sugar, and vanilla until stiff peaks form. In a large bowl, gently combine pumpkin with 2 tablespoons of the whipped cream, then fold in the rest of the whipped cream.
  • For serving, divide the pumpkin whipped cream among 8 glasses or dessert bowls. Place 1 pear half in each glass and top with cookie crumbs.
