Vibrant corn salad pairs perfectly with Cajun fish.
Ingredients:
  • 5.00 gm cajun seasoning
  • 4 (175g each) boneless white fish fillets (we used Australian dory fillets)
  • olive oil cooking spray
  • 2 corn cobs, kernels removed
  • 250g green beans, trimmed
  • 1 small red onion, finely chopped
  • 1 lemon, juiced
  • 62.50 ml coriander leaves, roughly chopped
Instructions:
  • Prepare the vegetables: Fill a saucepan halfway with water and bring to a boil. Add the corn and beans and cook for 3 to 4 minutes until the beans are bright green. Drain and rinse under cold water, then pat dry. In a bowl, mix the corn, beans, onion, 2 tablespoons of lemon juice, and coriander. Season with salt and pepper.
  • Coat both sides of the fish with seasoning, gently massaging it in with your fingertips.
  • Preheat a large non-stick pan over medium-low heat, then lightly coat it with oil. Cook fish in batches for 3 to 4 minutes on each side, or until cooked through. Serve alongside a fresh salad.
