Craft a custom Cajun spice blend for vibrant fish and chicken creations at home.
Ingredients:
  • 4 x 180g white fish fillets (such as ling, perch or blue-eye)
  • Steamed corn cobs, to serve
  • Jasmine rice, to serve
  • 20.00 gm sweet paprika
  • 1 tsp cayenne pepper
  • 1 tsp Turmeric
  • 1 tsp dried oregano
  • 1.25 gm ground nutmeg
  • 5.00 gm caster sugar
  • 2.40 gm sea salt
Instructions:
  • Prepare the Cajun spice rub by combining all ingredients in a bowl until thoroughly mixed. Then, evenly spread the mixture onto a baking tray.
  • Use paper towel to gently pat fish fillets dry. One at a time, press both sides of each fillet into the spice rub, making sure they are evenly coated. Shake off any excess rub.
  • Heat oil in a large, non-stick frying pan over medium heat. Cook fish in batches for 3 to 4 minutes per side, until perfectly cooked. Serve alongside corn and rice.
