Cajun spiced fish with flavored rice for a quick and tasty meal in under 20 minutes.
Ingredients:
  • 40.00 ml Cajun spice mix
  • 4 (about 150g each) firm white fish fillets (such as ling)
  • Olive oil spray
  • 2 x 250g pkts Coconut, Chilli & Lemongrass Steamed Basmati Rice
  • 1 avocado, halved, stone removed, peeled, coarsely chopped
Instructions:
  • Spread the spice mix on a large plate and coat the fish evenly by turning it in the mixture.
  • Coat a spacious non-stick skillet with a light mist of olive oil spray. Place the fish in the pan and sear for 2-3 minutes on each side, or until it easily flakes with a fork in the thickest section.
  • Cook the rice according to package instructions.
  • Portion the rice into individual serving dishes and layer with the fish and avocado. Serve promptly to enjoy at its freshest.
