Delicious Southern peach cobbler with fresh peaches and a homemade biscuit topping, perfect for summer nights.
Ingredients:
  • 8 fresh peaches - peeled, pitted and sliced into thin wedges
  • 0.25 cup white sugar
  • 0.25 cup brown sugar
  • 0.25 teaspoon ground cinnamon
  • 0.125 teaspoon ground nutmeg
  • 1 teaspoon fresh lemon juice
  • 2 teaspoons cornstarch
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 6 tablespoons unsalted butter, chilled and cut into small pieces
  • 0.25 cup boiling water
  • 1 teaspoon ground cinnamon
Instructions:
  • Prepare your mise en place.
  • Preheat the oven to a toasty 425°F (220°C).
  • Toss peaches with white sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch until evenly coated. Transfer to a 2-quart baking dish and bake in a preheated oven for 10 minutes.
  • In a large bowl, mix flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt. Use your fingertips or a pastry blender to blend in the butter until the mixture looks like coarse meal. Stir in water until just combined.
  • Remove the oven-roasted peaches and generously spoon the topping over them.
  • Combine 3 tablespoons of white sugar with 1 teaspoon of cinnamon in a small bowl, then sprinkle the mixture over the entire cobbler.
  • Bake until the topping turns a beautiful golden color, approximately 30 minutes in the preheated oven.
