Delicious peach dumplings: Fresh peaches wrapped in potato dough, boiled, and topped with vanilla wafer crumbs, sugar, and melted butter.
Ingredients:
  • 8 potatoes - peeled and cubed
  • 1 egg
  • 5 cups all-purpose flour
  • 10 firm ripe peaches
  • 1 cup white sugar
  • 0.5 cup butter, melted
  • 1 (16 ounce) package vanilla wafers, crushed
Instructions:
  • Add the potatoes to a pot, ensuring they are fully submerged in water. Boil over medium-high heat until tender. Drain, then pass through a ricer or mash.
  • Spread riced potatoes on a clean work surface. Crack in the egg and gradually knead in the flour until a stiff dough forms. Adjust flour as needed. Rest dough briefly before rolling it out.
  • Roll out the dough on a floured surface to 1/4 inch thickness, possibly in two batches. Cut into 8x8 inch squares to match the size of your peaches. Wrap each peach in a dough square, then firmly pinch to seal.
  • 1. Boil a large pot of water. Add the peach dumplings, ensuring the water covers them as much as possible. Use multiple pots if needed to accommodate 3 to 4 peaches per pot. Cook for 20 minutes, flipping halfway through for even cooking. Remove using tongs or a slotted spoon.
  • Place a peach dumpling on a plate, remove the pit, and sprinkle with melted butter, sugar, and vanilla wafer crumbs before serving.
