Delicious peaches enveloped in buttery dough, finished with a dollop of sweet hard sauce post-bake. Ideal for pairing with sugar-free ice cream.
Ingredients:
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 0.75 cup butter flavored shortening
  • 5 tablespoons ice water
  • 6 fresh peaches - peeled, pitted and halved
  • 0.25 cup butter, softened
  • 1 egg
  • 0.25 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 2 cups confectioners' sugar
Instructions:
  • Combine flour and salt in a medium bowl. Add butter flavored shortening and mix with hands or a pastry blender until mixture resembles coarse crumbs. Pour ice water over the dough and mix until it comes together. Knead briefly, then divide into 6 pieces.
  • Preheat the oven to 375°F (190°C) for a perfect bake.
  • Roll out the dough into thin circles on a lightly floured surface. Put two peach halves together and wrap each in a dough circle, sealing at the top. Transfer the dumplings to an ungreased baking sheet.
  • Bake dumplings in a preheated oven for 30 minutes or until golden brown. While the dumplings bake, prepare the sauce. Combine butter, egg, nutmeg, vanilla, salt in a bowl. Use an electric mixer on low speed to blend. Slowly add confectioners' sugar. Drizzle over hot dumplings.
