Stovetop-simmered fresh peaches topped with golden-brown homemade biscuits, served warm with whipped cream or ice cream.
Ingredients:
  • 1 tablespoon cornstarch
  • 4 cups sliced fresh peaches
  • 1 teaspoon lemon juice
  • 1 cup all-purpose flour
  • 1 tablespoon white sugar
  • 1.5 teaspoons baking powder
  • 3 tablespoons shortening
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) for the perfect cooking temperature.
  • Whisk together 1/2 cup sugar, cornstarch, and cinnamon in a saucepan. Add sliced peaches and lemon juice, tossing until peaches are coated.
  • Stir the filling over medium heat until it thickens and comes to a boil. Let it boil for 1 minute. Transfer the mixture to an ungreased 2-quart casserole dish, then keep it warm in the oven while preparing the topping.
  • Combine flour, 1 tablespoon sugar, baking powder, and salt in a medium bowl. Mix well, then blend in shortening until mixture resembles fine crumbs. Stir in milk until evenly moistened.
  • Take the peach filling out of the oven and gently place 6 evenly-sized spoonfuls of dough over the peaches.
  • Continue baking the cobbler until the topping turns a delightful golden brown, for approximately 25 to 30 minutes.
