Delight your loved ones with beautiful almond and orange cakes!
Ingredients:
  • 150g butter
  • 1 orange
  • 141.90 gm caster sugar
  • 200g almond meal
  • 150.00 gm self-raising flour
  • Icing sugar
Instructions:
  • 1. Preheat the oven to 170°C. 2. Line a 12 x 1/2 cup muffin tray with paper cases. 3. In a bowl, combine 150g melted and cooled butter, 2 whisked eggs, and the finely grated rind and juice of 1 orange. Mix well.
  • Combine 2/3 cup caster sugar, 200g almond meal, and 1 cup self-raising flour, stirring until fully mixed. Distribute the mixture evenly among the paper cases.
  • Bake until golden and a skewer inserted in the center comes out clean, usually around 18-20 minutes. Serve warm, dusted with icing sugar.
