Trendy Australian almond cakes called Friands are now popular in cafes. This quick and simple recipe will satisfy your cravings.
Ingredients:
  • 75g (1/2 cup) plain flour
  • 270g (1 2/3 cups) icing sugar mixture
  • 150g (1 1/2 cups) almond meal
  • 40.00 ml poppy seeds
  • 1 large orange, rind finely grated
  • 5 egg whites
  • 180g butter, melted, cooled
  • 90g (1/4 cup) orange marmalade
Instructions:
  • Preheat your oven to 200°C. Use the melted butter to generously grease 10 friand pans, then arrange them on a baking tray.
  • Sift flour and icing sugar into a large mixing bowl, then gently mix in almond meal, poppy seeds, and orange rind.
  • Whisk the egg whites until frothy but not firm. Gently fold them into the dry ingredients using a large metal spoon. Add the melted butter and stir until everything is just combined.
  • Pour the batter into the prepared pans, filling them 3/4 full. Bake in a preheated oven for 25 minutes or until golden and a skewer inserted into the center comes out clean. Let the friands rest in the pans for 5 minutes before transferring them onto a wire rack.
  • Warm the marmalade in a small saucepan over low heat until melted, stirring occasionally. Brush the tops of the warm friands with the melted marmalade and let cool.
