Orange & poppy seed biscuits

Whip up quick and delicious orange poppy seed cookies in no time!
Ingredients:
  • 40.00 ml poppy seeds
  • 20.00 ml finely grated orange rind
  • 21.00 gm fresh orange juice
  • 250g unsalted butter, at room temperature
  • 295g (1 1/3 cups) caster sugar
  • 2 eggs, lightly whisked
  • 375g (2 1/2 cups) plain flour
  • 2.50 gm bicarbonate of soda
  • 230g (1 1/2 cups) icing sugar mixture
  • 5.00 gm unsalted butter, softened
  • 42.00 gm fresh orange juice
Instructions:
  • Preheat the oven to 180°C and line 4 baking trays with non-stick baking paper.
  • In a bowl, mix together poppy seeds, citrus rind, and juice. Let it sit for 10 minutes.
  • In a bowl, effortlessly blend butter, sugar, and eggs using an electric beater. Gently fold in flour, bicarbonate of soda, and poppy seeds with a wooden spoon until just mixed. Place heaped teaspoonfuls of batter on lined trays, ensuring they are 5cm apart. (For freezing instructions, refer below.)
  • Bake in the preheated oven, rotating trays halfway through, for 12-14 minutes or until golden. Allow to rest for 5 minutes before moving to a wire rack to cool.
  • For the icing, combine icing sugar mixture, butter, and juice in a bowl. Mix until smooth and shiny. Transfer to a plastic bag, cut a small hole in one corner, and drizzle the icing over the chilled biscuits.
