Crispy chicken thighs over creamy mashed potatoes. Irresistible!
Instructions:
  • Combine eggs, milk, almond meal, Parmesan, chives, salt, and pepper in a shallow dish. Mix thoroughly with a fork until well combined.
  • Place a chicken thigh between plastic wrap and gently flatten using a meat mallet. Repeat with the rest of the chicken thighs.
  • Add the bread to a food processor and pulse until finely crumbled, then transfer the crumbs to a shallow dish.
  • Coat chicken thighs in egg mixture and breadcrumbs, pressing gently. Place coated chicken on a plate and refrigerate for 30 minutes to chill.
  • In a large frying pan over medium-high heat, sizzle the oil and butter. Cook chicken for 4-5 minutes on each side until beautifully golden and fully cooked. Enjoy with steamed veggies and creamy mashed potatoes.
