Try this refreshing mint pesto with juicy roast lamb.
Ingredients:
  • 375.00 ml firmly-packed mint leaves
  • 125.00 ml slivered almonds
  • 2 garlic cloves, roughly chopped
  • 113.75 gm extra-virgin olive oil
  • 60g parmesan cheese, finely grated
Instructions:
  • In a food processor, combine mint, almonds, and garlic. Pulse until almost smooth, scraping down the sides as needed.
  • While the motor is running, slowly pour in the oil until well combined.
  • Place the fragrant pesto in a bowl, sprinkle in the Parmesan cheese, season with a pinch of salt and pepper, and mix thoroughly until fully integrated.
  • Prepare the minted lamb cutlets according to the related recipe.
