Indulge in succulent lamb cutlets paired with vibrant mint and almond pesto.
Ingredients:
  • 12 French-trimmed lamb cutlets
  • 375.00 ml firmly-packed mint leaves
  • 125.00 ml slivered almonds
  • 2 garlic cloves, roughly chopped
  • 113.75 gm extra-virgin olive oil
  • 60g parmesan cheese, finely grated
Instructions:
  • Prepare the mint, almonds, and garlic in a food processor. Blend until nearly smooth, scraping down the sides as needed. While blending, slowly pour the oil into the processor until fully combined. Transfer the mixture to a bowl and mix in the parmesan, salt, and pepper until fully incorporated.
  • Preheat the grill to medium-high heat and set up a wire rack over a large baking tray.
  • Lay the cutlets on a wire rack and generously spread 1 teaspoon of flavorful pesto over each one.
  • Grill cutlets for 3 minutes, then flip and spread 1 teaspoon of pesto on top. Continue grilling for 3 to 4 minutes until desired doneness.
