Spiced lamb chops with minted yoghurt

Savor tender and flavorful lamb chops paired with a vibrant capsicum salad and refreshing mint yogurt dressing for a delightful and affordable meal.
Ingredients:
  • 8 lamb mid-loin chops
  • 2 1/2 tsp ground coriander
  • Salt & freshly ground black pepper
  • 250g natural yoghurt
  • 250.00 ml fresh mint leaves
  • 2 red capsicums, halved, deseeded, finely diced
  • 1 telegraph cucumber, quartered lengthways, cut into 1cm pieces
  • 50g baby spinach leaves, washed, dried
Instructions:
  • Lay the lamb chops flat on a baking tray, generously season both sides with 2 teaspoons of coriander, salt, and pepper.
  • In a large frying pan over medium-high heat, heat the oil until shimmering. Add the lamb chops and sear for 4 minutes on each side for medium doneness, or until they reach your desired level of doneness.
  • In a food processor, blend together the yogurt, mint, and remaining coriander until thoroughly mixed.
  • In a large bowl, mix together the bell peppers, cucumber, and spinach.
  • Plate the salad, then layer the lamb chops on top and drizzle with the yogurt dressing.
