Almond cookies with chocolate kisses, a twist on the classic peanut blossoms.
Ingredients:
  • 0.5 cup butter, softened
  • 0.5 cup almond butter
  • 0.5 cup white sugar
  • 0.5 cup packed brown sugar
  • 0.75 teaspoon baking soda
  • 0.5 teaspoon cream of tartar
  • 0.25 teaspoon salt
  • 1 egg
  • 2 tablespoons milk
  • 0.5 teaspoon vanilla extract
  • 1 cup whole wheat flour
  • 3 tablespoons white sugar
  • 2 tablespoons ground almonds
  • 48 milk chocolate candy kisses with almond, or as needed
Instructions:
  • Preheat oven to 350°F (175°C) for the perfect cooking temperature.
  • In a large mixing bowl, blend butter and almond butter with an electric mixer on medium-high speed until creamy, approximately 30 seconds. Add in 1/2 cup sugar, brown sugar, baking soda, cream of tartar, and salt, mix until fully combined. Incorporate egg, milk, and vanilla extract into the mixture until well combined.
  • Combine whole wheat flour and as much all-purpose flour as the mixer can handle, then fold in the rest of the flour until dough forms.
  • In a shallow bowl, mix 3 tablespoons of sugar with ground almonds. Shape the dough into 1-inch balls, then coat them with the almond-sugar mixture. Place the cookies 2 inches apart on ungreased baking sheets.
  • Bake in the preheated oven for 8 to 10 minutes until the edges are firm and the tops are cracked. Press a chocolate almond kiss into the middle of each cookie right away and allow them to cool.
