Delicious almond croissants with a sweet, light, and tender texture.
Ingredients:
  • 75g butter, at room temperature
  • 100.00 gm almond meal
  • 37.50 gm icing sugar
  • 40.00 ml plain flour
  • 4.40 gm vanilla essence
  • 125.00 ml flaked almonds
  • 4 Croissants, split lengthways
  • Icing sugar, for dusting
Instructions:
  • Preheat oven to 180C (160C fan-forced). Line a baking tray with paper. Arrange croissants on tray and bake for 5 minutes.
  • In a food processor, combine butter, almond meal, icing sugar, flour, and vanilla essence. Pulse until a smooth paste is achieved.
  • Flatten out each croissant and generously spread 1 tablespoon of the mixture in the center. Close them up like a sandwich. Spread 1 teaspoon of paste on top, sprinkle with flaked almonds, and bake for 5-10 minutes until golden. Dust with icing sugar before serving.
