Experience the delicious fusion of apple crumble, custard, and croissants in one delectable dessert!
Ingredients:
  • 1/2 x 385g can apple slices pie fruit, chopped
  • 10.00 gm caster sugar
  • 0.63 gm ground cinnamon
  • 80g (2/3 cup) almond meal
  • 125ml (1/2 cup) double thick custard
  • 3 frozen butter puff pastry sheets, just thawed
  • 50g butter
  • 75g (1/2 cup) plain flour
  • 25g (1/4 cup) flaked almonds, toasted
  • 32.00 gm brown sugar
Instructions:
  • Prepare 2 baking trays by lining them with parchment paper.
  • In a bowl, mix together the apple, sugar, cinnamon, and 1 tablespoon of almond meal. In a separate bowl, combine the custard with the rest of the almond meal.
  • Cut a 5cm-wide strip from 1 pastry sheet. Press gently to attach the strip to one side to create a 20 x 30cm rectangle. Divide the rectangle into three 10 x 20cm rectangles, then cut each rectangle in half diagonally to make 6 triangles. Repeat with remaining pastry sheet to yield a total of 18 triangles.
  • Drop a generous spoonful of the custard mixture and apple filling onto each triangle about 2cm from the base. Fold the pastry over the filling, then roll up the triangles into croissant shapes. Arrange the croissants on the trays with 4cm space between each one. Chill in the fridge for 30-40 minutes until the pastry firms up.
  • Preheat the oven to 220C/200C fan forced. Make the crumble topping by gently rubbing the butter into the flour with your fingertips until it forms coarse crumbs. Stir in the almonds and sugar until well combined.
  • Gently coat croissants with egg white before generously sprinkling with the flavorful crumble topping. Bake in the oven for 25-30 minutes until beautifully golden and perfectly cooked.
  • Enjoy croissants warm or at room temperature.
