Decadent custard apple ice cream swirled with chocolate, pecans, and cookie crumbles.
Ingredients:
  • 1 litre vanilla ice cream
  • 1 large custard apple
  • 250g pkt butternut snap cookies
  • 100g pecan
  • 200g dark chocolate, chopped
  • 125ml evaporated milk
Instructions:
  • Allow the ice cream to sit at room temperature for approximately 20 minutes, or until it has softened slightly, then transfer it to a large mixing bowl.
  • Cut the custard apple in half and remove the flesh. Chop the flesh roughly, discard the seeds. Crush the cookies in a snap-lock bag using a rolling pin. Combine the crushed cookies, custard apple, and pecans with the ice cream. Mix well and spread the mixture into a 1.5 litre container or dish. Cover with plastic wrap and freeze until firm, for several hours.
  • In a small saucepan, combine chocolate and evaporated milk. Stir continuously over low heat until chocolate is fully melted. Pour the mixture into a bowl to cool slightly. Drizzle the chocolate sauce over scoops of ice cream and enjoy!
