Elevate a classic dessert with a surprise custard layer for a delicious twist!
Ingredients:
  • 15.00 gm vanilla custard powder
  • 386.25 gm milk
  • 1/2 x 180g block white chocolate, chopped
  • 8 large pink lady apples, peeled, cored, cut into thick wedges
  • 53.75 gm caster sugar
  • 375.00 ml frozen cherries, thawed, halved
  • Vanilla ice-cream, to serve
  • 100g butter, chilled, chopped
  • 59.40 gm brown sugar
  • 40.00 ml plain flour
  • 200.00 gm traditional rolled oats
  • 125.00 ml natural sliced almonds
Instructions:
  • Mix custard powder with 1/4 cup milk in a saucepan until smooth. Heat over medium-high heat. Slowly stir in the rest of the milk. Cook, stirring until it starts to boil. Lower heat and simmer until it thickens. Remove from heat, add chocolate, mix until smooth. Transfer to a bowl, cover with plastic wrap, let cool for 20 minutes, then chill in the fridge for at least 2 hours until set.
  • Preheat your oven to 180C (160C fan-forced).
  • In a large saucepan over medium-high heat, combine apple, caster sugar, and 1 tablespoon of water. Cover and cook for 8 minutes until the apple just begins to soften. Add cherries and cook for an additional minute before serving.
  • Prepare the Crumble Topping by combining butter, brown sugar, and flour in a bowl. Use your fingers to blend the mixture until combined. Then, add oats and almonds and toss everything together.
  • - Transfer the apple mixture to a 26cm round baking dish using a slotted spoon. - Top with dollops of cold custard. - Sprinkle the crumble topping over the custard. - Bake for 35 to 40 minutes until the crumble is golden and the apple is tender. - Let it stand for 10 minutes before serving. - Enjoy with a scoop of vanilla ice cream on the side.
