Apple & cherry strudel

Indulge in a luxurious apple and cherry strudel for the perfect festive treat.
Ingredients:
  • 3 Golden Delicious apples, peeled, cored, thinly sliced
  • 680g btl morello cherries, drained
  • 100g (1/2 cup) caster sugar
  • 42.00 gm fresh lemon juice
  • 40.00 ml kirsch (optional)
  • 2.50 gm ground cinnamon
  • Melted butter, to grease
  • 10 sheets filo pastry
  • 60g butter, melted
  • 100g pkt almond meal
  • Pure icing sugar, to dust
  • Whipped cream, to serve
Instructions:
  • In a large glass or ceramic bowl, toss together the apple, cherries, sugar, lemon juice, kirsch, and cinnamon. Let it sit for 2 hours to macerate, then drain.
  • Preheat your oven to 180ºC and gently grease a baking tray with butter. Layer filo sheets, brushing each one with melted butter. Spread almond meal over the sheets and add the filling along one side, leaving a border. Roll up the filo tightly, tuck in the ends, and place seam-side-down on the tray. Brush with remaining butter before baking.
  • Bake until golden, about 25 minutes. Dust with icing sugar and serve with whipped cream.
