Slow-Cooker Pork Chops with Apple-Cherry Stuffing

Delicious mix of sweet cherries, tart apples, and savory onions.
Ingredients:
  • 1 package (6 oz) turkey flavor stuffing mix
  • 3 medium celery stalks, chopped (1 cup)
  • 1 medium tart cooking apple, peeled and chopped (1 cup)
  • 1/2 cup chopped onion
  • 1 cup dried cherries
  • 1/4 cup butter or margarine, melted
  • 1 cup Progresso™ chicken broth (from 32-oz carton)
  • 6 boneless pork loin chops, about 3/4 inch thick (about 2 lb)
Instructions:
  • Thoroughly coat a 5- to 6-quart slow cooker with cooking spray.
  • Combine all the ingredients in a large bowl, except for the pork. Place the pork chops in the slow cooker and top them evenly with the stuffing mixture.
  • Cover and simmer on low heat for 3 to 4 hours, or until the pork reaches at least 145°F and the stuffing reaches 165°F.
