Delicious slow cooker dish with apples, sweet potatoes, onions, and sauerkraut. Sauerkraut turns sweet and mild when cooked.
Ingredients:
  • 4 (1 inch thick) boneless pork chops
  • 2 medium sweet potatoes, peeled and sliced 1/2 inch thick
  • 1 medium onion, sliced
  • 2 apples - peeled, cored and sliced
  • 1 tablespoon brown sugar
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon salt
  • freshly ground black pepper to taste
  • 1 (16 ounce) can sauerkraut, drained
Instructions:
  • Preheat a skillet over medium-high heat and spray with cooking spray. Sear the pork chops on both sides until golden. Remove from skillet.
  • Layer sweet potato slices at the bottom of a 3 to 4 quart slow cooker. Top with onion and apple slices. Sprinkle brown sugar, nutmeg, salt, and a touch of pepper. Add pork chops and cover with sauerkraut. Cook on Low for 5 hours, or up to 6 hours for extra tenderness.
  • Spoon the flavorful slow cooker juices over the pork and vegetables before serving.
