Slow-Cooker Pork Chops with Vegetable Medley

Tender slow-cooked pork and veggies create a delicious meal for four.
Ingredients:
  • 1 1/2 teaspoons seasoned salt
  • 1 teaspoon garlic-pepper blend
  • 2 tablespoons olive oil
  • 4 boneless pork loin chops, 1/2 inch thick (about 1 lb)
  • 1 cup ready-to-eat baby-cut carrots
  • 4 small red potatoes, cut in half
  • 1 onion, cut into thin wedges
  • 1 small yellow summer squash, thinly sliced
  • 1/4 cup chopped fresh basil
Instructions:
  • Combine salt and garlic-pepper blend in a small bowl. Sprinkle half of the mixture over the pork chops. Heat 1 tablespoon of oil in a 12-inch skillet over medium-high heat. Sear the pork chops in the hot oil for about 4 minutes, flipping once, until browned.
  • Coat a 4- to 5-quart slow cooker with cooking spray. Add pork chops to the slow cooker and layer with carrots, potatoes, and onion.
  • Gently simmer on Low heat for 3 to 4 hours with the lid on.
  • Combine squash, basil, remaining 1 tablespoon of oil, and the remaining seasoning mixture in a medium bowl. Spoon the mixture on top of the vegetable mixture in the slow cooker. Increase the heat setting to High, cover, and cook for an additional 10 to 15 minutes, or until the squash is crisp-tender.
