Fall-inspired pork chop dinner with cranberries and stuffing.
Ingredients:
  • 6 boneless pork loin chops, about 1 inch thick (about 2 1/4 lb)
  • 2 teaspoons seasoned salt
  • 1/2 bag (16-oz size) cornbread stuffing (3 cups)
  • 1/2 cup sweetened dried cranberries
  • 1/2 medium apple, chopped (1/2 cup)
  • 1/2 medium onion, chopped (1/4 cup)
  • 1/4 cup chopped pecans
  • 1 cup plus 2 tablespoons water
  • 1/4 cup butter or margarine, melted
  • 1/2 cup cranberry relish or sauce
Instructions:
  • Place the pork chops in a large resealable plastic bag and add seasoned salt. Shake the bag to coat the pork evenly.
  • Prepare the slow cooker by spraying it with cooking spray. Combine all the ingredients, excluding the cranberry relish, in the cooker. Place the pork chops on top of the stuffing mixture.
  • Cover the dish and let it simmer on the low heat setting for 4 to 5 hours. Serve the pork and stuffing alongside a side of cranberry relish.
