Delicious slow cooker pork, apple and squash dinner recipe.
Ingredients:
  • 1 small butternut squash
  • 3 large unpeeled cooking apples
  • 4 pork loin chops, 3/4 inch thick (about 1 1/4 lb)
  • 3/4 cup sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
Instructions:
  • Peel the squash and cut it in half to remove the seeds. Slice the squash into 1/2-inch pieces. Quarter the apples, remove the cores, then cut into smaller pieces. Trim excess fat from the pork.
  • In a large slow cooker, create layers with the squash and apples. Combine sugar, flour, cinnamon, and salt in a small bowl. Use this mixture to coat the pork thoroughly. Arrange the pork on top of the apples and squash. Sprinkle any remaining sugar mixture over the pork.
  • Cover and simmer on a low heat for 8 to 9 hours.
